FAOX-C enzyme · Project-based

Cut sugar inside the food.

FAOX-C is an enzyme that converts fructose into a rare sugar, directly in the food during processing.

What is FAOX-C?

The FAOX-C enzyme is a fructosyl oxidase developed by Fooditive. It converts fructose into Fooditive Sweetener® Keto-Fructose (5-keto-D-fructose, 5-KDF) inside the food during processing. Manufacturers will license it to cut sugar in their own products.

It is a second route to 5-KDF. 5-KDF is made by fermentation; the enzyme makes it inside the food.

Our focus is on the sweetener and non-animal casein. We develop FAOX-C in partner projects, when a food maker brings a product and a market.

How it works

Designed for sugar reduction

  • Sugar transformation

Converts fructose into 5-KDF, which has 1.5 kcal/g, about 60% fewer calories than sugar.

  • Small amounts

Designed to work in small catalytic amounts, within standard processing.

  • Taste and mouthfeel

Designed to keep sweetness and mouthfeel while you cut sugar.

  • Many matrices

Designed for pH-sensitive dairy as well as high-heat bakery processes.

How it works

One enzyme, one reaction

An enzyme is a natural catalyst: it speeds up one reaction and is not used up. Added in small amounts, FAOX-C converts the fructose already in a product into 5-KDF.

We produce FAOX-C with food-grade microorganisms by controlled precision fermentation. Enzyme activity is typically managed or inactivated in final processing.

We confirm each function with the licensee, in trials on its own product.

Why license FAOX-C?

  • Skip years of early R&D. Build on our enzyme development instead of starting from scratch.
  • Stand out. Create reduced-sugar, clean-label products that differ from what is on the shelf.
  • Scale with us. We work as an extension of your team, from integration to scale-up.

Good to know

How can I work with FAOX-C?

Through a partner project. We develop the application in your product with you, when you bring a product and a market.

How does it relate to the 5-KDF sweetener?

FAOX-C makes 5-KDF inside the food. The 5-KDF sweetener itself is made by fermentation and purification, and is available for licensing now.

Does the enzyme stay active in the product?

Enzyme activity is typically managed or inactivated in final processing, for a stable end product.

Let’s develop FAOX-C together.

We are looking for manufacturers and ingredient suppliers to license and co-develop the enzyme.
